A Fresh and Seasonal Cuisine
Our philosophy is always food first. We want people to feel the connection to everything we serve, the producers, the farmers and the amazing Spanish ingredients available in Canada. It’s important for us to know where our food is coming from and we want our diners to feel the same when they come in and eat. We will also offer cooking classes where guests can be in our kitchen and ask questions and really begin to understand and appreciate ingredients and techniques.
Chef Humberto's culinary journey has taken him from DiverXO Madrid’s only 3 Michelin-star restaurant, Italy, France and Peru to the Biltmore Hotel in Miami. In Toronto, he found his gastronomic home working as an executive chef at various restaurants and gastropubs. As a teacher, I share my love and passion for cooking with the students of George Brown College and Centennial College. In this role as a mentor, I have the opportunity to share with the students his passion for cooking and Paellas and Spanish food. My most recent venture is with my own Catering company Paelleros, Gourmet Guyz Food Truck, and OverTheFire where he cooks paellas and South American style bbq for private parties, special events and festivals.
